French Pancakes

Pancakes have become a staple to our Sunday morning routine. They are interchangable, of course, with french toast, bacon, eggs and fried tomatoes, but not with granola and yoghurt which is eaten the rest of the week.
My french pancake recipe is taken from the Joy of Cooking. Enjoy!
3/4 cup flour
1/2 tsp salt
1 tsp baking powder
2 TBSP icing sugar
2 eggs
2/3 cup milk
1/3 cup water
1/2 tsp vanilla
Mix the flour, salt, baking powder and icing sugar in a bowl.
Beat 2 eggs, add milk, water and vanilla.
Mix wet and dry ingredients together. Heat the frying pan, so that the water dances. Use a few drops of oil in between each batch of pancakes.
Pour pancakes into size desired. And enjoy!

I hate to break it to you, but Aunty J makes some pretty deelish pancakes. They are a weekend staple in our house too.
